Harvesting Herbs for Winter Use During the summer months all the garden herbs and flowers grow in abundance and it's hard to comprehend that in the depths of winter most of these will have died back completely. In order to have a supply of herbs for cooking in winter I like to harvest bunches and hang them up to dry.
